Keeping with tradition, this delightful dish is made from scratch, anchored by two light, fluffy grilled crêpes that are handmade daily and perfectly pleated into large triangle pockets that spread the entirety of the serving platter. In addition to the classic crêpe, dish visionary, Nicole Héroux, set out to accommodate guests special dietary needs by offering a crêpe that is lactose free and gluten free, using a buckwheat flour straight from our local farmers in Penn Yan, New York.
